One of my children requested enchiladas tonight. I hate to admit it, but i usually use canned enchilada sauce when I make them and guess what.....didn't have any on hand. So I googled homemade enchilada sauce and ended up combining a few recipes into one. This is what I did:
Enchilada sauce
2 T canola oil
2 T flour
2 T chili powder
Cook these three ingredients together on low for about 2 minutes.
Then add:
1 8oz can tomato paste
2 c water
1/4 t cumin
1/2 t garlic powder
1/2 t onion powder
1/4t red pepper
salt to taste (ended up using quite a bit as it was a little bland for our tastes)
Mix together completely, making sure the tomato paste completely dissolves and cook on low for 20 minutes.
This made quite a bit of enchilada sauce and was really quite tasty!
So for the enchiladas I just cooked ground beef (about 1 1/2lb) with some chopped green onion, sprinkling garlic powder, salt, and chili powder in for taste. Then after it is cooked, drain and put back into skillet. Add one can of cream of cheddar soup and mix together. Divide up evenly into tortillas, add a little of the enchilada sauce, roll up and place seam side down into a baking pan. Add more enchilada sauce on top of each one and sprinkle with grated cheddar cheese. Cook on 350 for 20 minute. We topped ours with salsa and sour cream. YUM!!!
This meal was a big hit with the kiddos :)
